Winter Cider – Traditional Method Cider
Cider is traditionally a summer drink, but we wanted to see what happens when winter is allowed in. Winter Cider is our traditional (champagne) method cider, made from natural Estonian apples and gently seasoned with a very small amount of carefully chosen Christmas-time spices.
Primary fermentation is carried out with wild yeast, followed by a second fermentation in bottle. The cider is finished with a dosage of 25 g/l, giving a rounder, softer expression while keeping the apple character at the centre.
The spices are deliberately restrained, offering only a subtle impression of apple pie and cardamom bun — a quiet aromatic lift rather than a dominant flavour. It’s the kind of cider that makes you smile almost without noticing, especially on a cold winter day.
