Description
Cassis is a sparkling wine made from organic Estonian blackcurrants using the traditional (champagne) method. Primary fermentation is carried out with wild yeast, allowing the fruit to express itself with depth, tension, and natural complexity.
During bottle fermentation, the concentrated character of blackcurrant is refined into a structured, vibrant sparkling wine. Finished with a dosage of 25 g/l, the wine balances rich fruit intensity with freshness and clarity rather than overt sweetness.
Cassis captures the decadence of a warm summer harvest while remaining firmly grounded in a cool northern style — tropical notes carried by acidity, structure, and restraint.
